SALTED HONEY MANGO PIE

Gluten-freeLactose-free

INGREDIENTS

  •        1   Large ripe mango
  • 100 g   Sunflower spread
  •   70 g   Brown sugar
  •   50 g   Cornmeal
  •   50 g   Talmond Tropical Almond Meal
  • 80 ml   Talmond Milk Unsweetened
  • 1/4 Tsp Salt
  •   50 g   Raw local honey
  •        3   Free-range eggs
  •        1   Vanilla bean
  • 1/4 Tsp Coarse-grain sea salt

PREPARATION

1.

Melt the sunflower spread and whisk in sugar in a bowl. Add cornmeal, Talmond Tropical Almond Meal, Talmond Milk Unsweetened, salt and mix well.

2.

Drizzle in the honey and combine, fold in each egg and scrape in the seeds of the fresh vanilla bean. 

3.

Fan out the slices of mango into bottom of greased pie pan and pour batter on top.

4.

Preheat oven to 180 °C and bake for 30 - 45 min. Let cool and sprinkle salt before serving.
