FONIO POKE BOWL

A fresh and colourful bowl filled with cooked fonio, vegetables and marinated protein!
SERVES 2


INGREDIENTS

1 cup cooked fonio

1 cup diced cucumber

1 cup diced mango

1 cup edamame (cooked)

1/2 avocado, sliced

1/2 cup shredded carrots

1 tbsp sesame seeds
Optional

200g tofu or salmon

Marinade: 2 tbsp soy sauce, 1 tbsp sesame oil, 1tsp rice vinegar, 1 tsp honey, minced garlic
PREPARATION
1.
Marinate the protein for 15–20 minutes if using tofu or fish. Grill or pan-fry until cooked.
2.
Place cooked fonio at the base of your bowl.
3.
Arrange toppings (cucumber, mango, edamame, carrots, avocado, and protein) neatly on top.
4.
Drizzle with dressing and sprinkle with sesame seeds.
5.
Serve chilled or at room temperature.

2 tbsp tahini or plain yogurt, 1 tbsp lemon juice, 1 tsp soy sauce, and water to thin.
