FONIO SALAD

A light, zesty, and nutritious salad perfect for lunch or as a side dish.
SERVES 4


INGREDIENTS

1 cup cooked fonio, cooled

1 cup cherry tomatoes, halved

1 cucumber, diced


½ red onion, finely chopped
¼ cup chopped parsley or mint

1 lemon (zested and juiced)

2 tbsp olive oil

Salt and pepper to taste
OPTIONAL

Crumbled feta, avocado, or olives
PREPARATION
1.
In a large bowl, combine fonio, vegetables, and herbs.

In a small bowl, whisk lemon juice, zest, olive oil, salt, and pepper.
3.
Pour dressing over the salad and toss well.
4.
Garnish with optional feta or avocado. Serve chilled or at room temperature.
